Runeberg's muffins
for 25 persons

500 g margarine
5 dl sugar
5 eggs
5 dl chopped almonds
5 dl bread crumbs
2.5 dl wheat flour
2.5 tsp baking powder
Surface: sugar water frosting and raspberry jam


1. Mix the softened margarine and sugar.
2. Add the eggs.
3. Mix the rest of the dry ingredients together and add to the batter.
4. Put the batter in muffin molds and bake at 200 degrees for about 10 minutes.
5.  Let the muffins cool down and decorate.

White Christmas in Kuusamo

Hello!

We spent our fourth Christmas in Kuusamo in Finland. It feels better and better every year because autumns have been so grey and boring during last years in the middle of Finland. From October to December I have energy to work because I know the Wonderland is waiting at week 52 in Kuusamo.

We have 600 kilometers to drive to Kuusamo but on the way we stop in my parents' home in Oulu. It is nice to meet them and my brother's family. Children enjoy the time with grandparents and cousins. And we don't have to spend too many nights with our big family (parents and four sons) in the little house. We can meet them for shorter time when we go to the north and when we come back.

Our cottage is located next to the ski tracks. Every morning and evening I ski with our retarded son a couple of kilometers with easy tracks. At late in the evening we can see crazy Finnish people going to sauna and ice-swimming. I am freezing! But actually I want to try it sometimes.

In the daytime I have two hours just for myself. I go to ski 15-20 kilometers in the wonderland. Days are so short that during the week I can see beautiful sunrises and sunsets. It is like in fairy tales.

In Kuusamo there is the hotel Kuusamon Tropiikki near our cottage. It was possible to make gingerbread, meet Santa Claus and his wife on Christmas Eve and have delicious Christmas dinner over there. One day they served glogg and Christmas pastries in the teepee. Reindeer was also there for a little sleigh ride.
